Have you ever done something your entire life, only to realize later that same thing that was so easy before actually has some complexities and ingredients that you didn’t realize were there?

Specifically, have you ever eaten your mom’s potato soup for years on end, only to realize that when you’re trying to recreate it and make it for a group of over a dozen people, some of which are dairy-free, some gluten-free, there are way more ingredients that have dairy and gluten than you once thought.

For starters, flour. Who would have thought it, but the recipe has flour as part of the base. All of a sudden I’m having to use cornflour (which definitely doesn’t taste the same by the way).

That yummy liquidy part of the soup that I thought must have just been juiced potatoes? Yeah, that’s a half-gallon of yummy evaporated milk. Dairy-free substitute? How about soy milk…great until you try to boil it and forget that it’s not supposed to be quite so sugary…

The point of this post is to say that oftentimes things seem easy on the outside, but until you actually dive in and see what it entails, you’ll never have a full appreciation for what goes on behind the scenes.
